My Favorite Chocolate Chip Cookie


Admittedly, I’m still working on my baking skills. But fortunately for me my good friend, Georgie Whatmore, is a cookie expert extraordinaire. She has been baking cookies and experimenting with recipes for years. While it’s hard to go wrong baking a cookie, the recipe below is my personal favorite:

  • ½ cup unsalted butter
  • ¼ cup raw sugar (preference for Demerara) or granulated sugar
  • ¾ cup light brown sugar (packed)
  • 1 large egg
  • 1 tsp vanilla extract
  • ¾ tsp baking soda
  • ½ tsp salt
  • 1¾ cup all-purpose flour
  • 150-200 g chocolate of your choice, chopped into bite-size chunks (preference for Baker’s)
  • sea salt
  1. Preheat the oven to 350 F
  2. Mix butter and sugars together
  3. Beat in the vanilla extract and egg
  4. Stir in the baking soda and salt
  5. Then add the all-purpose flour slowly (avoid adding all at once)
  6. Mix in chocolate chunks and any other add-ins (like walnuts)
    • We put the chocolate in ziplock bags and broke it into bite-sized chunks with a hammer
  7. Place 2 tbsp sized mounds of dough onto baking tray with parchment paper, 2 inches apart.
  8. Sprinkle the tops with a pinch of sea salt before baking
  9. Bake for 9-11 minutes or until the chocolate has melted, the dough is slightly golden brown and less glossy than before
